Food Memoirs

I should tell you that in my Family Book, in my mom's memoirs, there are at least 3-4 recipes on food she remembered from way back. Here are a few samples from mom's memoirs - the answer on my question what she remembered about food from before the war.

First, where was 'yuch',which is a chicken broth (soup) with beans and on Shabbat - without beans.

Then 'rosl': roast with potatoes, onion, etc.

Also she remembered her grandmother made dumplings with potatoes and cottage cheese, 'begalah' with cottage cheese and rise - that's a dessert....

As far as mamalyga - I remember occasionally, rarely it was made, probably for some guests from outside. What was interesting and different about mamalyga that it was supposed to be eaten by hands, not with forks or knifes. In the middle of the table on a large plate was the round mamalyga, and around it several plates with oil, brynza, roasted onions, garlic with something, and probably more. Everyone supposed to take a piece of mamalyga by hand and dip it in what you like... The last time I eat mamalyga was in Rochester, NY, where some of my family and friends lived, and they decided to surprise me and my wife with mamalyga, and also mititei and carnatsey..
