Chicken Soup

Chicken broth was made with a fresh chicken (feet/claws included). Lots of fresh vegetables were added to give it a rich color and flavor. Soup was strained to create a beautiful chicken broth.
My maternal grandmother, Eugenia, always added fresh dill and fresh garlic to flavor her soups.
My paternal grandmother, Cecelia from Botosani, made a delicious chicken soup too for Shabbat. When she wanted to make it extra special, she would serve it with a chicken claw centered in the middle of the broth! This was considered a delicacy although my 17 year old self was a bit taken aback.
