Dough Ingredients:

2 ½ C Flour ½ T Salt

½ Lb Butter 3 Egg Yolks

3 T white distilled Vinegar 3 T cold Water

Filling Ingredients:

1 Lb Large Prunes Grated rind 1 Lemon

Grated rind 1 Orange 2 t Lemon Juice

2 t Orange Juice ½ C large Dates (chopped)

¼ C finely chopped Walnuts

Dough Recipe:

Combine 1 ½ C flour with salt and butter, rubbing butter into flour with fingers. Mix egg yolks with fork. Add vinegar and water to yolks. Add 1 C flour, sifting into egg mixture, mixing together lightly. Combine the two mixtures and blend well with fork.

Filling Recipe:

Cook prunes in enough water to cover until soft; drain. Pit and chop very fine. Add chopped dates, lemon rind, orange rind, lemon juice, orange juice and nuts. Chop for 5 minutes.

Making the Cookies:

Pinch off dough the size of a walnut. Roll out on floured board into 2 ½ inch round. Place leveled tsp of filling in the center. Pinch sides together, forming triangles over filling. Place on ungreased baking sheet. Bake at 400 degrees for 20 minutes. Makes about 30.

Variation:

Make filling out of 2 Lb of prune jam, juice of ½ lemon and ¾ C walnuts (finely chopped). Combine all ingredients, mixing well and use as the filling recipe.
