Chicken Fat can be bought instead of made. To make cut raw chicken fat into small chunks. Cook in pot over medium-high heat until cracklings are a light golden brown. Add chopped onions. Cook until onions are a light brown. Strain. Refrigerate (or freeze is better) the fat – i.e
the chicken fat. Grind the onions and refrigerate (or freeze is better) – i.e. the grieven
